I will always remember those last few minutes before stepping off the plane in Shanghai. I was mentally preparing myself to keep an open mind and respect local customs. But really on my mind, I was looking forward to having the time of my life at my first World Congress of Food Science & Technology!

Coming to Grips With Dual Identities
In my first article, I mentioned that I had previously worked as a cook in a world-class restaurant in Spain. I use the term, "world class," not for bragging rights, but rather, to reinforce the fact that I come from a very rigorous and particular food background.

A World in Need of Food Science
The location was the village of Nakasongola, a few hours north of Uganda�s capital city Kampala. My professor and I were there on a field study from Brigham Young University aimed at discovering how USAID fortified food-aid commodities were being used by beneficiaries.
